- 10 carrots
- 1 tbsp High Heat oil for roasting (ghee, coconut oil, avocado oil, etc)
- Cashew Cheesy Sauce for topping
- Fresh Herbs
Preheat oven to 375.
Coat carrots in oil of choice (we like coconut, avocado or ghee)
Roast for 20 minutes or until tender.
Top with Cashew Cheesy Sauce and fresh herbs.
