Crispy Cheesy Smashed Potatoes (vegan, paleo, gluten-free)

What You Need:
24 ounces yellow baby potatoes
2-3 tablespoons olive oil
1 tablespoon fresh herbs (thyme, oregano, etc)
Cashew Cheesy Sauce for topping
Scallions for topping (optional)
salt and pepper, to taste

Directions:
Preheat oven to 425 degrees. Line a baking sheet with parchment paper or spray with oil.

Cook potatoes until tender in a pot of boiling water, about 15 minutes. Drain.

Place potatoes onto the baking sheet and use a fork to carefully smash the potatoes until flat, but still in one piece. Top with oil and fresh herbs.

Place into oven and bake for 20 minutes, or until golden and crisp.

Top with Cashew Cheesy Sauce and enjoy!
