Flavor-Packed Southwest Veggie Burger (vegan, gluten-free, dairy-free)

What You Need:

½ cup slivered almonds
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon chilli powder
1 teaspoon sea salt
1 1/2 cups cooked brown rice
1/4 cup finely minced onion
2 teaspoons fresh lime juice
1 can (15 oz) black beans, drained and rinsed
1 tablespoon avocado oil
4 gluten-free buns of choice (or use extra lettuce leaves in place of bun)
4 lettuce leaves
4 red onion slices
4 tomato slices
1/4 cup guacamole
1/2 cup Cashew Cheesy Sauce


Directions:

In a food processor combine almonds, cumin, paprika, garlic powder, chili powder, and sea salt. Blend until mixture forms a fine meal. Add brown rice, onion, lime juice, and black beans to almond/spice mixture. Blend until mixture is smooth. Remove bean mixture from food processor and form into four large patties. Add oil to a large skillet and when warm, add patties. Cook for 4 minutes on each side or until well-browned adding additional oil to the skillet, if needed. Toast buns, if desired.

Top each bun (or lettuce leaf) with one black bean burger patty, one lettuce leaf, one onion slice, one tomato slice, one tablespoon guacamole, and two tablespoons Cashew Cheesy Sauce. Enjoy!
