4-5 cups of water or broth
1 medium head cauliflower, coarsely chopped
1 medium yellow onion
1 carrot, chopped
3 celery stalks, chopped
3 garlic cloves, minced
1 tbsp avocado oil or healthy oil of choice
1/2 handful of fresh parsley, coarsely chopped
1 bay leaf
Sea Salt + Pepper to taste
1/4-1/2 cup Cashew Cheesy Sauce (depending on how cheesy you like it)
Heat oil in a large pot. Add onion and saute until softened (3-4 minutes), then add garlic (1-2 minutes), then add all other veggies, spices and water/broth. Let simmer 15 minutes or until all veggies are tender. Remove Bay Leaf. Add Cashew Cheesy Sauce and soup to a blender or use an immersion blender in the pot to create a smooth consistency.
Top with Cashew Cheesy Sauce + Avocado chunks + sprouts of choice.
